BLUEBERRY PANCAKE RECIPE EVOLUTION


Growing up with an abundance of freshly harvested blueberries, the recipe possibilities were endless. When making pancakes, blueberries were a favorite flavorful and nutritious ingredient.


The blueberry pancake evolution began with substituting basic flour with minimal nutritional properties to using a whole wheat flour. Having bursts of fresh blueberries with every bite, the recipe became a favorite for Saturday morning breakfasts.


Then to nutritionally boost the recipe even more, protein was added. At the time, chocolate whey protein was the most readily available choice. This eventually led to a plant based chocolate protein powder in order to minimize external hormonal consumption and the use of animal products. The combination of whole wheat flour and protein powder created a thick dense pancake packed with nutrients. 


As time went on, the addition of protein was not as important as it had been before. However, creating a gluten free pancake that was simple and nutritious, was tastefully sparked. The staple ingredients became gluten free oats, bananas, & eggs with some spices, walnuts, and of course blueberries. The pancakes were simple, light, and tasty and loved by many.


Through experimental design, the blueberry pancakes have now been transformed into being vegan and gluten free. The desire to create recipes that are vegan and gluten free while also up holding the BHdesign Nutritious Creation Promise of using wholesome ingredients has been extended to this blueberry pancake recipe. These pancakes are packed full of love and nutrition. Enjoy!


Banana, Blueberry, Walnut Pancakes - Vegan & Gluten Free


~ All Purpose Flour

~ Coconut Oil

~ Oats

~ Bananas

~ Flaxseed

~ Plant Based Milk

~ Blueberries

~ Vanilla

~ Walnuts


Set aside blueberries and walnuts. Mix all other ingredients together. Fold in the blueberries. Place a spoonful of batter on a medium heated pan. Break up walnuts by hand and place the pieces on top of the pancakes. Lightly press the walnuts into the batter as to secure their place before flipping. After a few minutes, the pancakes should be formed enough to flip. Once firm, remove from stove top and enjoy!
